Apple Banana Cinnamon Pancakes (Paleo & Gluten Free)

Ingredients

  • 2 eggs, whisked
  • 2 bananas, mashed
  • 1 peeled apple, diced small
  • 2 tbs almond butter
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp pure vanilla extract
  • A little coconut oil for cooking pancakes

Instructions

  1. Mash the 2 bananas with a fork
  2. Whisk 2 eggs in a medium bowl
  3. Add banana mash to eggs
  4. Dice 1 apple.
  5. Stir bananas, eggs and apple chunks together
  6. Add almond butter, cinnamon, nutmeg and vanilla
  7. Combine into a pancake batter
  8. Pour into pancake shapes in frying pan and cook with a thin layer of coconut oil over medium-low heat
  9. Note: Make these a little smaller than a traditional pancake. (They shouldn’t be wider than your spatula.) They will cook more evenly and be easier to flip that way
  10. Makes about 8 small pancakes
  11. Recipe can be easily be doubled or tripled to make more pancakes
  12. Top with fresh fruit or raw maple syrup

Twice Baked Breakfast Sweet Potatoes

Ingredients

  • 2 medium sweet potatoes
  • 4 slices bacon
  • 1 medium sweet onion, diced
  • 4 garlic cloves, minced
  • sea salt and black pepper
  • 4 small eggs

Directions

  1. Heat oven to 400 degrees. Poke sweet potatoes with a knife a couple times then place directly onto oven rack. Cook for 40-45 minutes until soft. Remove and let cool.
  2. In a large skillet, fry bacon until crispy. Remove and toss in onion and garlic in leftover bacon grease. Cook for about 5-7 minutes until onion is translucent.
  3. After bacon cools, cut into small pieces.
  4. Once sweet potatoes are cool, cut lengthwise then scoop out the middle of the sweet potato. I used a knife to cut about 1/4 inch away from the skin all the way around then I cut the middle into three pieces. This makes it easier to remove the middle without breaking the skin.
  5. Mash sweet potato into skillet. If it is a little undercook, cover and cook for 10 more minutes.
  6. Stir in salt, pepper and half the bacon bits. Place sweet potatoes on a parchment lined baking sheet.
  7. Scoop mash into potato shells then create a large divot for the egg. You will want to make sure the divot is big enough to fit the egg.
  8. Break one egg into each divot then sprinkle with remaining bacon bits. Cook for 15 minutes or until yoke is set.

Paleo Breakfast Pizza

Pizza Crust:

  • 1 cup tapioca flour
  • 1 egg
  • 1 tbsp olive oil
  • 1 tbsp water (more if needed)
  • add any spices you like, this crust itself doesn’t taste like much without any spices
  1. Preheat oven to 375.
  2. Combine ingredients until a wet dough forms, this does not feel like your typical dough.
  3. Spread it out evenly and thinly.
Top with:
  • homemade or bought pesto (just blend basil, garlic, parsley, olive oil and pine nuts until smooth)
  • slices of tomato
  • two eggs
  • optional: romano cheese
  1. Bake for 15 minutes.
  2. When it’s done cooking, add proscittuo

Coconut Flour Waffles

Ingredients

4 eggs, separated
2 tablespoons coconut oil, melted
1 teaspoon vanilla
1/2 teaspoon baking soda
1/8 teaspoon salt
1/8 teaspoon cinnamon
1/3 cup almond milk or coconut milk
1/4 cup sifted coconut flour

Instructions

  1. Put egg whites in a large mixing bowl and beat to stiff peaks. Set aside.
  2. In a separate mixing bowl, stir together egg yolks, melted coconut oil, vanilla, baking soda, salt, cinnamon, almond milk, and sifted coconut flour. Stir until almost all lumps are gone. Gently fold in beaten egg whites.
  3. Cook according to waffle maker’s instructions. Mine took about 1/2 a cup of batter per waffle and I ended up with 3 waffles.

Paleo Egg Muffin

Ingredients
  • 8 oz. Pork Breakfast Sausage
  • 1 T. Olive Oil
  • ½ Sweet Onion, thinly sliced
  • ¾ C. Bell Peppers, chopped or thinly sliced(any color)
  • 1 `1/2 C. Spinach(packed)
  • 1 t. fresh Oregano, chopped or ½ t. dry oregano
  • 9 Eggs
  • Dash of Pepper
  • ¾ t. Real Salt
  • ¼ C. Coconut Milk or Almond Milk
Instructions
  1. Preheat oven to 350 degrees. Grease a muffin tin.
  2. Place the ground sausage in a sauté pan and heat on medium high. Break up the pork into crumbles with a spatula as it cooks.
  3. When the pork is half way cooked, add 1 T. of olive oil, onions, peppers, and oregano to the pan. Saute until the onion is translucent. Add the spinach to the pan and cover with a lid. Cook for 30 seconds, remove the lid and toss the ingredients. Spinach should be wilted but still bright green. Remove from heat.
  4. Place the eggs in a large mixing bowl along with the pepper, salt, and milk. Whisk together until eggs are well beaten.
  5. Add the sausage and vegetables to the egg mixture and mix in until well distributed.
  6. Divide the mixture between the greased muffin tins(12 total), making sure that each tin has a somewhat equal ratio of eggs/fillings.
  7. Bake in preheated oven for 18-20 minutes. Cool for a few minutes and remove from tins, loosening the edges first with a knife.
